What The Fellas Say

What The Sommelier Says

In the glass, Dominó Colar 2023 reveals a translucent ruby hue, expressing the purity of Castelão from the Atlantic-influenced sands of Colares. On the nose, it opens with delicate aromas of wild red berries, pomegranate and dried herbs, lifted by a subtle saline minerality that speaks of its coastal terroir. The palate is vibrant and linear, with crisp acidity and fine-grained tannins shaping a wine of precision and finesse. Light in body yet profound in character, it lingers with a savory, almost umami finish, making it a remarkable expression of Castelão in its most elegant and authentic form.

Pairs well with…

…anything on the lighter side of happy – a grilled fish, roast quail, veggie stir-fry.

About The Winemakers

Former chef, Vitor Claro, turned to winemaking in 2010 after taking over an old vineyard in Alto Alentejo, determined to create light, elegant wines from nothing but grapes. His method—harvesting earlier than others—was once seen as eccentric but is now common practice. Since 2016, he and his wife, architect Rita Ferreira, have devoted themselves fully to wine, discovering in nature and small-scale work the beauty of family projects. Beyond Alto Alentejo, they also cultivate in Colares and Carcavelos, a rare Atlantic-Mediterranean microregion threatened by real estate pressure. In the village of Caparide, they are restoring one of the last vineyards, reviving the tradition of long-aged fortified wines. While those wines mature, they also offer a bright, seaside rosé from Castelão das Vines—a glimpse of the elegance they aim to preserve.
