This complex and layered white wine is delightfully exuberant, amorous and a teeny bit dangerous. It’s like the famous scene in Fantasia when Ben Ali Gator woos Hyacinth Hippo to the strains of La Gioconda – an entrancing pas de deux filled with grace and character and technical brilliance. In this case, the intense floral and honey of the Fernão Pires plays the role of Hyacinth with the crisp acidity of the Síria filling in for Ben Ali’s rascally and ravenous motives.

Lemon colour flecked with honey. On the nose, fruity and vegetal, with aromas of ripe fruits like apple and quince, and with hints of white pepper. Very mineral and expressive. On the palate, intense, dense, and fresh. Dry vegetal notes, crushed stone, and ripe fruit dominate. Strong acidity, complex, and very lively.

Pairs well with…

…a camembert melting over a rough wooden platter with some herbed olives, a seafood stew like a cioppino, a medium-spicy curry with some garlic naan to soak it all up.

Pedro Martim’s journey into the world of wine began by helping his childhood friend and winemaker, António Maçanita, at Fita Preta in 2011. This experience sparked a deep passion for the craft. He later led the wine program at 100 Maneiras, pursued WSET Level 3 training, and worked as Wine Director at the M.B.D. group, overseeing restaurants like Trincas and The Decadente. Pedro also led the sommelier team at JNcQUOI, part of Grupo Amorim. Today, he focuses on representing wines that truly excite him, believing that wine should be experienced with authenticity and passion.
