An old farm kitchen. Warm afternoon sunlight splashes across a scarred wooden table where a chef warms blocks of chocolate in a bain-Marie. On the stove, several copper pots that look like the locals used them to fight off Napoleon’s troops simmer away, teasing the air with the smell of stewed plums, raspberries, blackberries and spices. The end goal is a chocolate plum cake with wild berry coulis but for now it’s just the suggestion, the hint, the allure of that delight.

Red fruits, cherry, some florals, chocolate, mild pepper, cedar. Full body, low center, somewhat short, almost concave structure, always correct, always connected, moderate energy. Very good acidity, medium tannins.

…venison shank slow-roasted in red wine and shallots, black truffle risotto with shaved pecorino romano, a dark chocolate plum cake.
